Our Signature Dish: Pupusas (Gluten Free!)

At the heart of our kitchen is the iconic pupusa—a warm, thick griddle cake made from fresh corn masa, hand‑pressed with care and cooked to golden perfection. Each pupusa becomes a flavorful canvas for your choice of fillings: queso (cheese), frijoles (beans), puerco (pork), pollo (chicken), or fresh vegetables.  We offer gluten‑free options; however, we are not a dedicated gluten‑free kitchen. 

Every pupusa is made to order, ensuring the highest level of authenticity and flavor. Picture the first bite: a lightly crisp exterior giving way to a soft, savory center, paired with tangy curtido (Salvadorian coleslaw) and our house tomato salsa. Meet Executive Chef D. Harley & Mamma Anna

Executive Chef David Harley, a proud Johnson & Wales Culinary grad, brings extensive expertise in international cuisines. His culinary approach preserves the integrity of traditional flavors while elevating each dish with creativity and precision. Chef David doesn’t just cook—he tells a story, capturing the essence of each region through thoughtful, flavorful creations. His newest venture blends Latin flavors with Southern comfort food, introducing a groundbreaking concept that’s the first of its kind in Eastern Tennessee. 

Working alongside him is Mamma Anna, whose mastery of Salvadoran cuisine brings heart, heritage, and time‑honored tradition to the kitchen. Together, they blend classic Salvadoran dishes with inventive new plates, creating a menu that celebrates culture, comfort, and culinary artistry.
